We hope not because these Blushing Heart Sheet Pan-Roasted Potatoes were a fun spin on a classic family recipe and make a beautiful compliment to all your cold weather comfort food classics – Sunday roasts, chicken dishes, meatless proteins, seasoned fish fillets, or savoury + sauteed veggies – for a subtle nod to the Month of Love & your family’s Valentine’s Day dining at home menu! Also inspired by our family’s internet connection this week with all six of us on at once – dropping like it’s HOT! 😉
About the ingredients for Blushing Heart Sheet Pan-Roasted Potatoes
- we used Little Potatoes Company’s Blushing Belle Creamer Potato beauties. Not only because they have Valentine’s Day-appropriate blushing pink skins, but because they’re the perfect size for mini heart-shaped cut outs. If you can’t locate these at your local grocer, any baby red potatoes (also called “Mini” or “Little Gem” potatoes) will work also.
- Our classic roasted potato family recipe typically combines a good extra virgin olive oil with Italian seasoning, garlic powder, fleur de sel (sea salt), ground black pepper & parmesan cheese. If you don’t have Italian seasoning, parsley, oregano or rosemary on their own or any of your family’s favourite seasoning blends will do just fine too.
- After punching out the hearts with your mini cutter, you’ll have scraps of potato leftover. We chop it up, bag it with a bit of cold water + splash of white vinegar & use it in soups or breakfast hash.
Blushing Heart Sheet Pan-Roasted Potatoes
Equipment
- Mini heart-shaped food cutters
- (1) Large or (2) Small Sheet pans
Ingredients
- (2) 1.5 lb bags Blushing Belle Potatoes *or similar*
- Extra Virgin Olive Oil *enough to lightly coat the potatoes, ~3 Tbsp*
- 1 tbsp Italian Seasoning
- 1 tbsp Garlic Powder
- 1 tbsp Parmesan Cheese *fine shredded*
- coarse salt *fleur de sel "sea salt" or similar - to taste*
- ground black pepper *to taste*
- 1 sprig fresh rosemary *for garnish*
Instructions
- Preheat oven to 425°F. Lay the potatoes out on a cutting board & slice each in half length-wise. Using a mini heart-shaped food cutter, cut out heart shapes from the rounded side down to the flat side. Save scraps for soups or breakfast hash.
- Add the heart-shaped potatoes to a mixing bowl. Drizzle with olive oil, then sprinkle with Italian seasoning, garlic powder, salt & pepper. Mix well to coat each potato evenly with ingredients.
- On a parchment paper-lined sheet pan(s), lay out the potato mixer & space evenly {we used 2 small sheet pans, or use 1 large size}. Sprinkle freshly grated parmesan cheese over top. Bake on middle rack in oven approx. 15 minutes, turning potatoes at half-way mark. Remove when crisp & golden to your liking, let set about 5 mins, garnish with fresh rosemary & serve with your favourite dish! That's it! Buon appetito!
