CANDY CANE CRINKLE ICE CREAM CAKE
Our last food share to the blog before we take a break from la Cucina chronicles – something simple + sweet because don’t we all need a bit of that right now ❤ I made this nut-free Candy Cane Crinkle Ice Cream Cake with the kiddos this week & it was a big hit. So, if you didn’t order that festive dessert from your fave bakery before the cut off or are just done with the baking-scapades, you can build this delight in 5 mins & let that pressure go! It was supposed to be a 2-layer version, but half of the ingredients didn’t make it to the assembly line with curious creatures stirring during our grocery delivery😏
YOU’LL NEED:
• a box of ice cream sandwiches (we used Chapman’s Lil Sammiches – Made in Ontario 🙌❤)
• a deep pan or dish to build it in (we used a 9 x 9 pan)
• Whipped topping (in a tub or spray can)
• Candy Canes (crushed)
• nut free chocolate (*any; break up in pieces – we used up some choco-bombs that went off during delivery 💥*)
TO MAKE:
• Lay down parchment or wax paper in the pan – enough to fall over the edges so you can lift out & transfer the dessert after
• lay out enough ice cream sandwiches to cover the surface area of your pan (we used 10 sammiches for a 9×9)
• top with Cool Whip & spread around to cover corner to corner
• sprinkle chocolate & crushed candy canes
*REPEAT 1ST STEPS IF YOU HAVE ENOUGH FOR 2 LAYERS, OR LEAVE AS IS*
• cover pan with saran wrap & freeze a couple of hours
• remove from freezer, lift dessert out of pan & place on a platter or serving dish.

Well, if this year hasn’t been one long, merry mess… but aren’t those moments of madness with dashes of magic what give this life any meaning at all? Void of all the excess & extra (hence our selfie stick special Holiday portrait…last year’s fam jams feel equally great #growth), this year we get more time to love on our people – what a beautiful, undervalued gift. The greatest accomplishments we will make aren’t the things we put out here for the virtual masses & external validation, they’re the collection of small, unpolished moments spent with the imperfect humans who need no impressions at all, admire us in all our flawfulness, have seen all sides of our humanness and whose love sustains us through the hardest of hards. I’ve never been more UN “holiday-ready”, the non-essentials have gone un-done & my heart feels fuller for it. If I’ve learned anything in my 12 years of holidaying in parenthood it’s that YOU are their favourite thing…I know because one of mine is no longer here. We’re holding families in the thick of grief & missing a special, irreplaceable someone at their celebrations in our hearts. We’re riding this heartache with you while still reaching for whatever joy we can grasp. For those struggling in any way, we wish you unrelenting hope & the knowing this won’t feel so hard & heavy forever…brighter days are coming – keep believing it. We’ve all had a MASSIVE human experience this year, and our family sends a big holiday group hug, love + light all around, as well as deep appreciation for the support you sent our way even with the maxed-out energy stores you had this year. WE DID HARD THINGS – celebrate the life out of that! Gratitude gives when it feels so much has been taken…
