The countdown to Christmas is on, I don’t quite feel “holiday-ready”{what does that even mean?!}, I may be the only blogger without a decked out home and tree, BUT festive food is where I find my joy this time of year and all the other holiday fussing gets tossed aside (my Un-doing!). We’ve got a simple and sweet frozen dessert recipe to share before we take a break from la Cucina chronicles Our nut-free Candy Cane Crinkle Ice Cream Cake got an upgrade – this year we tried a multi-layer version and made a Candy Cane Fudge Ice Cream Yule Log Cake – three tiers of holiday ice cream sandwiches with peppermint fudge ice cream smothered in between topped with a peppermint-flavoured whipped topping, sprinkled with crushed candy canes & drizzled with chocolate fudge – delish! It’s easy enough to get your kiddos to be holiday dessert helpers & perfect for treating a crowd or big family this Christmas/Holiday Season. So, if you didn’t order that festive dessert from your favourite bakery before the cut off or are just done with the baking-scapades, you can build this delight in under 10 merry minutes & let that pressure go! Ingredients for Our Candy Cane Fudge Ice Cream Log Cake
Peppermint Ice Cream Sandwiches – you can find limited edition holiday ice cream sandwiches in most grocers this time of year. We went with Chapman’s Holiday Moments Peppermint version. Each layer of our ice cream cake had six sandwiches and the yule log 18 total. If you aren’t a fan of peppermint, use whatever flavour ice cream sandwich you prefer!
Candy Cane Fudge Ice Cream – between each ice cream sandwich layer is a generous amount of Candy Cane Fudge Ice Cream. You could also use whatever your family’s favourite ice cream flavour is.
Peppermint Whipped Topping – we used a tub of frozen whipped topping, added a smidge of Peppermint Extract & green food colouring to get a festive flavoured mint green topping for this ice cream cake.
Finishing Festive Touches: once the yule log is assembled, we sprinkled crushed candy canes. Right before serving we slathered it with chocolate fudge drizzle!

How to Assemble the Candy Cane Fudge Ice Cream Yule Log Cake
On a freezer-friendly long plastic serving tray (*avoid ceramic!*), add six ice cream sandwiches length-wise, then a generous layer of ice cream to cover the ice cream sandwiches end-to-end & repeat 2 more times. Add your peppermint whipped topping & smooth over the cake until fully covered. Sprinkle with crushed candy canes, add some mini candy cane “hearts” using two put together on each end of the log, wrap in saran wrap & freeze at least 4 hours. Just before serving, drizzle with chocolate fudge. Slice thinly & enjoy!

Candy Cane Fudge Ice Cream Yule Log | La Cucina di Kerrs
Equipment
- Long Serving Tray (approx. 7 x 13 or similar)
Ingredients
- 18 Peppermint Ice Cream Sandwiches *we used Chapman's*
- 1.5 L Candy Cane Fudge Ice Cream *we used President's Choice*
- 1 L Whipped Topping *we used Cool Whip*
- ¼ tsp Peppermint Extract
- 20 drops Green Food Colouring
- Candy Canes *approx. 4 large crushed, 4 mini for hearts*
- Chocolate Fudge Syrup *squeeze bottle - enough to drizzle over ice cream yule log*
Instructions
- Lay a sheet of wax paper down on your serving tray. Add a row of 6 ice cream sandwiches length-wise, then smother a generous amount of Candy Cane Fudge ice cream over top covering the ice cream sandwiches edge-to-edge (approx. 1/2 to 3/4 inch of ice cream). Repeat 2 more x's - you'll use 18 ice cream sandwiches & have 2 layers of ice cream in between. Using a spatula or similar, smooth and adjust the edges of the cake to get the ice cream sandwiches as in-line as possible.
- Add your peppermint extract and green food colouring to your tub of whipped topping (which should be kept in the fridge until use). Mix well until your desired mint green colour is achieved (we used approx. 20 drops of food dye). Using a spatula or similar, smother your ice cream log with the peppermint whipped topping until nicely covered.
- Add your unwrapped large candy canes to a Ziploc bag, seal and lay down on a wood food board. Using a mallot or meat tenderizer, smash the candy canes until desired "crush" size achieved. Sprinkle overtop of your minty ice cream sandwich yule log. Using your mini candy canes, add a heart-shape to each end of the log by having the hook & end parts "kiss"!
- Wrap the ice cream sandwich yule log in saran wrap & freeze at least 4 hours before serving. We made ours the day before & froze overnight. Remove from freezer RIGHT BEFORE serving, drizzle with chocolate fudge syrup & slice thinly. Place leftovers back in the freezer wrapped in saran immediately after. Enjoy!
