If there’s one thing that gets me really fired up (in the best way) lately it’s discovering a way to take a traditional family recipe and make it in an easier, fun way. We have a Tex-Mex themed night almost weekly – alternating between tacos, fajitas, burritos & quesadillas. I stumbled upon Pioneer Woman’s Chicken Chili Quesadilla demo last week & once I saw her sheet pan quesadilla fold hack, there is no going back! It’s genius! And the best way to make quesadillas for a hungry brood or party crowd, in my humble big family momager opinion. The quesadilla fold went viral on social, and while it was a neat trick, it’s best for single-serve. The sheet pan quesadillas fold hack will render your multi-person serving all at once – no line ups at your family griddle/press to fill famished bellies one at at time 😉 We hope you try it. It’s seriously the easiest sheet pan quesadilla recipe for families or any hungry crowd! A fun one if you’re wondering what to make for Cinco de Mayo too!
About the Ingredients for Sheet Pan Quesadillas:
- This is less of a “recipe” and more of a method of cooking your family quesadillas. Freestyle it and use whatever combo of quesadilla fixings your family would usually use. Last week’s quesadilla night included Tex-Mex shredded cheese, chopped green chillies, black beans, canned corn, diced avocado and salsa. Other suggestions: diced bell peppers, chopped spring onions and diced tomatoes. Add a squeeze of fresh lime for that finishing Mexican flare!
- We used leftover BBQ chicken in this version but you could also use same-day or leftover cooked taco night ground (meat or meatless), or leave out the meat to keep it vegetarian.
- For the topping, we added a dollop of sour cream, chopped chives, salsa, avocado slices & fresh parsley. You could also add hot sauce, more green chillies, guac, Greek Yogurt, chopped cilantro, etc.
- We brushed olive oil on top of the quesadilla pillow instead of the suggested melted butter.
- Set up a family quesadilla bar & let every one add their favourite toppings. We love doing taco bars too!
- We had this as a quick dinner, but this recipe would be a fun one for party appetizers. Just slice into smaller portions for bite-sized nibblers.
Sheet Pan Quesadillas Fold Recipe (*adapted from Pioneer Woman*)
Easy Sheet Pan Quesadillas Recipe for Families | La Cucina di Kerrs
Equipment
- (2) 13 x 18 sheet pans
Ingredients
- 8 10" flour tortillas
- 4 cups Tex-Mex shredded cheese blend
- 1 127 mL can chopped green chillies
- 1 cup salsa *+/- to taste & for topping*
- 1-2 cups cooked chicken or taco ground *+/- to taste; leave out to keep dish vegetarian*
- 1 avocado diced/sliced
- ½ can corn
- sour cream *for topping*
- fresh parsley or cilantro chopped
- olive oil *enough to brush on pan & on top of quesadilla pillow; approx. 4 tbsp*
- 1 lime sliced to squeeze over top
Instructions
- Preheat oven to 425°F. Lightly brush one sheet pan with oil. Take 7 tortillas and lay them out half way inside the pan, half way outside of the pan in the following fashion: 2 along each side, 1 at each end, 1 in the center to make sure the entire pan is covered.
- Build your quesadilla starting with half of the shredded cheese for the base, then green chillies, chicken or taco ground, black beans, avocado, corn & salsa. Top the ingredients with the remaining portion of the Tex-Mex cheese.
- Fold the tortillas over toward the inside of the pan nice and snug to cover the ingredients. Add the last tortilla over top to completely cover the filling. Brush a light portion of olive oil over the top.
- Take the second sheet pan, and flat side down, press on top of the quesadilla pillow to seal in the ingredients and keep them compact. Leave the second sheet pan on top and bake your quesadillas on the middle rack of your oven for 20-25 mins. Oven temps vary so do a check around the 15 minute mark. The quesadillas are done once the top is a nice golden hue and crisp.
- Remove the quesadillas from the oven, let cool about 5 mins, then cut with a long knife or pizza cutter into 8 slices. Set up a family quesadilla bar & let every one add their favourite toppings - sour cream, cheese, salsa, etc. Add a squeeze of lime if you wish. Enjoy! Tag us on social @House_of_Kerrs if you try!
