2 cupssugar(*we used 1 cup sugar, 1 cup sugar substitute*)
1tbspcinnamon(*use 3/4 if excluding raisins/nuts*)
1cupvegetable oil(*we used 3/4 cup Greek Yogurt*)
2cupsgrated, unpeeled zucchini(*about 1 medium zucchini*)
1 1/2cupschopped nuts(*pecan or walnuts*)
Preheat oven to 350 F
In a large bowl, combine flour, sugar, cinnamon, baking soda, baking powder, salt, oil (or greek yogurt), vanilla & eggs. Beat at medium speed until well mixed. Stir/fold in zucchini, raisins & 1 cup of nuts (*optional*).
Pour into greased loaf pan (*or muffin tins*). Sprinkle with remaining nuts (*optional*). Bake on middle rack of oven - Loaf takes ~ 25 mins, muffins take ~17 mins (or until pick inserted comes out dry).
Let cool 5-10 mins. Serve with whipped butter (1/2 cup butter + 2 tbsp milk beat on med-high ~ 5 mins). Enjoy!
