Classic Zucchini Loaf Recipe

A simple zucchini bread recipe made the classic way packed your family will gobble up in no time!

Equipment

  • Loaf pan, muffin tin or 13 x 8 cake pan
  • Hand Mixer

Ingredients

  • 2 cups flour
  • 2 cups sugar (*we used 1 cup sugar, 1 cup sugar substitute*)
  • 1 tbsp cinnamon (*use 3/4 if excluding raisins/nuts*)
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup vegetable oil (*we used 3/4 cup Greek Yogurt*)
  • 2 tsp vanilla extract
  • 3 eggs
  • 2 cups grated, unpeeled zucchini (*about 1 medium zucchini*)

Optional

  • 1 cup raisins
  • 1 1/2 cups chopped nuts (*pecan or walnuts*)

Instructions

  • Preheat oven to 350 F
  • In a large bowl, combine flour, sugar, cinnamon, baking soda, baking powder, salt, oil (or greek yogurt), vanilla & eggs. Beat at medium speed until well mixed. Stir/fold in zucchini, raisins & 1 cup of nuts (*optional*).
  • Pour into greased loaf pan (*or muffin tins*). Sprinkle with remaining nuts (*optional*). Bake on middle rack of oven - Loaf takes ~ 25 mins, muffins take ~17 mins (or until pick inserted comes out dry).
  • Let cool 5-10 mins. Serve with whipped butter (1/2 cup butter + 2 tbsp milk beat on med-high ~ 5 mins). Enjoy!
